I'm not in front of my computer right now but there are multiple cymbal mapping points for the same cymbal as well as drum points within SSD5. I believe you might be able to see this on the free version. I couldn't get a tight closed sound but this leads to mapping. One of the biggest problems I noticed was the HiHat through SSD5 is loose and not very responsive. It could be possible that I have something set wrong but not sure.

My interface is a Focusrite Saffire Pro 40 and it should be able to handle anything I need to do. I have a room with my acoustic kit set up with mics that I plan to use Trigger 2 with but that's going to be much later. Just FYI, I'm still trying to get my studio set up to some degree so I haven't figured out the best way to do anything regarding my drums yet. Surely if you put them in the same position as one you are swapping out the map does not change. I only have the free SSD5 I’m not sure what you mean by having to remap for different cymbals. It was easier to use what was in the td30 preset. The only drums I didn’t do this for were snare and ride in SD3 which use ps. I found the easiest way to map on both SD3 and SSD5 is the record the midi hitting each individual pad/rim and right down the note numbers. You can set a map in SSD5 that can then be applied to any kit just as you can in SD3. SSD5 is not different to others in how it reacts to the incoming midi. The latency and how the pads respond is more to do with your computer audio interface and how you module is set up for triggering.
